Laayyoo is our first-ever naturally processed coffee! We have always been quite hesitant about naturals and have honestly never been the biggest fans because of the lack of cleanliness we found in so many we tasted. Laayyoo though is exploding with fruit flavors like blue raspberry candy, florals, and great sweetness all while being exceedingly clean.
This coffee comes from Sookoo coffee which is run by Ture Waji. Ture sent us a few samples of other lots a few months back that totally blew us away. The moment we tried them we knew we wanted to work with Ture. Unfortunately, the two lots we tasted were heading to Europe but luckily we were able to find another lot from him that was equally as delicious.
Laayyoo is produced at the Raro Nensebo washing station in Uraga, Guji. The farmers who deliver their cherries to make up this lot come from the village Teraga and their farms sit at an elevation of 2,100 to 2,350 MASL. This lot is primarily composed of the 74110 and 74112 varieties
Laayyoo refers to an indigenous tree growing in this area that provides shade to the coffee plantations.

ILSE Coffee is a specialty coffee roasting company started by Rebecca Grossman and Lucas Smith. We are a small, two-person team in both business and in life! We focus on sourcing traceable coffees from small/micro producers whom we can build a relationship with and purchase from year after year. We are extremely transparent with our pricing as the most important thing for us is that the producers we are working with are paid fairly.
